Lobster & Spinach Queso

Prepare the Cheese Mixture
In a large saucepan, combine the cream cheese, sour cream, cheddar cheese, and Monterey Jack cheese over medium heat. Stir constantly until melted and smooth.

Add Lobster and Spinach
Once the cheese mixture is smooth, add the cooked lobster meat, chopped spinach, minced garlic, and chopped green onions. Stir until the spinach has wilted and all ingredients are well combined. Cook for an additional 5 minutes.

Transfer the lobster and spinach queso into a serving bowl and serve warm with tortilla chips.

Mix Tartar Sauce Ingredients
In a bowl, combine mayonnaise, Dijon mustard, finely chopped pickles, lemon juice, salt, and pepper. Mix well until all ingredients are combined.

Cover and refrigerate the tartar sauce until ready to serve.

Prepare the Potatoes
Peel and thinly slice the potatoes into even strips. Soak them in cold water for at least 30 minutes to remove excess starch.

Combine the Vegetables
In a large bowl, combine the shredded cabbage and grated carrots.

In a separate small bowl, whisk together mayonnaise, apple cider vinegar, sugar, and salt until smooth.

Pour the dressing over the cabbage and carrots. Toss to combine thoroughly. Cover and refrigerate for at least 30 minutes before serving.
