Cook the Shrimp
Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove from heat and set aside.

Prepare the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the thin-cut potatoes to the hot oil in batches. Fry until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.

Mix the Coleslaw
In a large mixing bowl, combine the shredded cabbage and grated carrot. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth. Pour the dressing over the cabbage and carrot mixture, and toss to combine thoroughly. Refrigerate for at least 20 minutes before serving.
