Method
Preparation of Herb Crust

Make the Herb Mixture
In a medium bowl, combine the chopped parsley, thyme, rosemary, minced garlic, olive oil, salt, and black pepper. Mix well until all ingredients are combined.
Chicken Preparation

Prepare the Chicken
Preheat your oven to 400°F (200°C). Place the chicken breasts on a baking sheet lined with parchment paper. Pat them dry with a paper towel.

Apply Herb Crust
Spread the herb mixture evenly over the top of each chicken breast, pressing it down gently to adhere.

Bake Chicken
Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the juices run clear.
Lemon Aioli Preparation

Mix the Aioli
In a small bowl, whisk together the mayonnaise, lemon juice, minced garlic, and salt until smooth. Adjust seasoning to taste.
Salad Preparation

Prepare the Salad
In a large bowl, combine the mixed greens, sliced red onion, and fresh fruit. Drizzle with champagne vinaigrette and toss gently to combine.
Green Beans Preparation

Cook the Green Beans
Bring a pot of salted water to a boil. Add the trimmed green beans and cook for about 4-5 minutes until tender-crisp. Drain and set aside.
Red Beans & Rice Preparation

Heat Red Beans & Rice
In a small saucepan, combine red beans and cooked rice over medium heat. Stir occasionally until heated through.
