Preparation

Prepare the Fish

1. Marinate the Fish

In a bowl, combine the mixed fish, olive oil, salt, black pepper, and lime juice. Mix well to coat the fish evenly. Cover and let it marinate for at least 15 minutes.

2. Cook the Fish

Heat a grill pan or skillet over medium-high heat. Add the marinated fish and cook for about 3-4 minutes on each side, or until cooked through and flakes easily with a fork. Remove from heat and set aside.

Prepare the Fruit Salsa

3. Mix the Salsa Ingredients

In a bowl, combine the diced pineapple, mango, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and let it sit for at least 10 minutes to allow the flavors to meld.

Prepare the Ragin' Tiger Sauce

4. Combine Sauce Ingredients

In a small bowl, whisk together the mayonnaise, sriracha sauce, soy sauce, lime juice, and garlic powder until smooth. Adjust the spice level by adding more sriracha if desired.

Assemble the Tacos

5. Warm the Tortillas

Heat the corn tortillas on a skillet over low heat for about 30 seconds on each side until warm and pliable.

6. Build the Tacos

Layer the mixed greens, cooked fish, fruit salsa, and a drizzle of Ragin' Tiger Sauce onto each tortilla. Fold the tortillas and serve immediately.
