Preparing the Tilapia

    Marinate the Tilapia

    In a shallow dish, combine the tilapia fillets and tiger sauce. Make sure the fillets are well coated. Cover and refrigerate for at least 30 minutes.

    Prepare the Coating

    In a separate bowl, mix together the shredded coconut, chopped pecans, salt, and black pepper.

    Coat the Tilapia

    Preheat the oven to 400°F (200°C). Take the marinated tilapia fillets out of the refrigerator and coat each fillet with the coconut-pecan mixture, pressing gently to adhere.

    Bake the Tilapia

    Heat olive oil in a large oven-safe skillet over medium heat. Once hot, add the coated tilapia fillets and cook for 3-4 minutes on each side until golden brown. Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes or until the fish flakes easily with a fork.

Making the Pineapple Salsa

    Combine Ingredients

    In a mixing bowl, combine diced pineapple, red bell pepper, red onion, cilantro, lime juice, and salt. Mix well and set aside to allow the flavors to meld.

Preparing the Red Beans & Rice

    Sauté Aromatics

    In a medium saucepan, heat olive oil over medium heat. Add chopped onion and garlic, then sauté until the onion is translucent, about 5 minutes.

    Add Beans and Seasoning

    Add the red beans, cumin, salt, and black pepper to the saucepan. Stir to combine and cook for an additional 5-7 minutes until heated through.

    Serve with Rice

    Serve the red beans over cooked rice, ensuring each plate has a generous portion.
