Method

Pancake Batter

  1. 1

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In a separate bowl, whisk together the milk, egg, and melted butter until smooth.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.

  4. 4

    Add Cinnamon Chips

Gently fold in the cinnamon chips into the batter until evenly distributed.

Honey Butter

  1. 5

    Prepare Honey Butter

In a small bowl, beat the softened unsalted butter and honey together until smooth and creamy. Set aside.

Bacon

  1. 6

    Cook Bacon

In a skillet over medium heat, cook the bacon strips until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain.

Cooking Pancakes

  1. 7

    Preheat Griddle

Preheat a non-stick griddle or skillet over medium heat and lightly grease with cooking spray or a little melted butter.

  2. 8

    Cook Pancakes

Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook until golden brown on the other side, about 1-2 minutes more.

  3. 9

    Repeat

Repeat with the remaining batter, greasing the griddle as needed.

Serving

  1. 10

    Serve

Serve the pancakes warm with honey butter, cooked bacon on the side, and drizzle with maple syrup.
