Method

Preparing the Pork Chop

  1. 1

    Season the Pork Chop

Rub the pork chop with Cajun seasoning and brown sugar. Allow it to marinate for at least 30 minutes.

  2. 2

    Cook the Pork Chop

Heat a grill or skillet over medium-high heat. Add the pork chop and cook for 6-7 minutes on each side, or until the internal temperature reaches 145°F (63°C). Brush with tiger sauce during the last minute of cooking.

Making the Pineapple Salsa

  1. 3

    Combine Ingredients

In a small bowl, mix together diced pineapple, red onion, cilantro, and lime juice. Stir well and let it sit for at least 10 minutes to allow the flavors to meld.

Preparing the Mixed Greens

  1. 4

    Toss the Greens

In a large bowl, toss the mixed greens with champagne vinaigrette just before serving.

Cooking the Green Beans

  1. 5

    Sauté the Green Beans

In a skillet, heat olive oil over medium heat. Add the trimmed green beans and sauté for about 5-7 minutes until tender. Season with salt to taste.

Serving the Dish

  1. 6

    Plate the Meal

On a plate, serve the cooked pork chop, topped with pineapple salsa, alongside the mixed greens, sautéed green beans, cubed cantaloupe, and a side of red beans and rice.
