Calamari Preparation

Prepare the Calamari
Begin by slicing the cleaned calamari into rings, about 1/2 inch thick. If using whole squid, make sure to remove the head and innards.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Whisk until evenly combined.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring each piece is well coated. Shake off any excess flour.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the calamari rings to the hot oil in small batches. Fry for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

Add Tomatoes and Spices
Pour in the canned crushed tomatoes, then add the red pepper flakes, dried oregano, and salt to taste. Stir to combine.

Simmer the Sauce
Bring the sauce to a simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.

Finish with Basil
Stir in the chopped fresh basil just before serving for added flavor.
