Preparing the Blackened Salmon

Season the Salmon
Pat the salmon fillets dry with a paper towel. Rub each fillet evenly with olive oil and then coat generously with blackening seasoning on all sides.

Cook the Beans and Rice
Add the red beans, rice, chicken broth, bay leaf, salt, and black pepper to the saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is tender and liquid is absorbed. Remove bay leaf before serving.
Preparing the Fresh Fruit Salad

Mix the Fruits
In a large bowl, combine sliced strawberries, blueberries, and kiwi. Drizzle honey and lime juice over the fruit and gently toss to combine.
Making the Champagne Vinaigrette

Combine Ingredients
In a small bowl, whisk together champagne vinegar, olive oil, Dijon mustard, honey, and a pinch of salt until well combined.
