Preparing the Blackened Salmon

    Season the Salmon

    Pat the salmon fillets dry with a paper towel. Rub each fillet evenly with olive oil and then coat generously with blackening seasoning on all sides.

    Cook the Salmon

    Heat a cast iron skillet over medium-high heat until very hot. Add the seasoned salmon fillets to the skillet and cook for 4-5 minutes on each side until blackened and cooked through. Serve with lemon wedges.

Making the Red Beans & Rice

    Sauté Vegetables

    In a medium saucepan, heat olive oil over medium heat. Add chopped onion and bell pepper, and sauté until soft, about 5 minutes. Add minced garlic and cook for an additional minute.

    Cook the Beans and Rice

    Add the red beans, rice, chicken broth, bay leaf, salt, and black pepper to the saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is tender and liquid is absorbed. Remove bay leaf before serving.

    Mix the Fruits

    In a large bowl, combine sliced strawberries, blueberries, and kiwi. Drizzle honey and lime juice over the fruit and gently toss to combine.

Making the Champagne Vinaigrette

    Combine Ingredients

    In a small bowl, whisk together champagne vinegar, olive oil, Dijon mustard, honey, and a pinch of salt until well combined.
