For the Baked Stuffed Cod

    Prepare the Filling

    In a mixing bowl, combine bread crumbs, chopped parsley, minced garlic, chopped onion, lemon juice, olive oil, salt, and black pepper. Mix well until all ingredients are fully combined.

    Stuff the Cod

    Preheat the oven to 375°F (190°C). Lay the cod fillets on a baking dish and season with salt and pepper. Divide the filling mixture evenly among the cod fillets, placing it on top of each fillet.

    Bake the Cod

    Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the cod is flaky and cooked through.

For the Lemon Butter Sauce

    Melt the Butter

    In a small saucepan over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

    Add Lemon Juice

    Stir in the lemon juice, salt, and pepper. Allow the sauce to simmer for an additional 2-3 minutes, then remove from heat.

For the Red Beans & Rice

    Prepare the Base

    In a medium saucepan, heat olive oil over medium heat. Add diced onion and bell pepper and sauté until softened, about 5 minutes.

    Cook the Rice

    Add the rice to the saucepan and stir for 1-2 minutes. Then, add water, salt, and cayenne pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender.

    Add the Beans

    Once the rice is cooked, stir in the red beans and heat through for an additional 5 minutes. Adjust seasoning to taste.
