Prepare the Wood Fire
Soak hickory wood chips in water for at least 30 minutes. Prepare a wood fire in your grill, allowing it to burn down until the coals are hot and ashed over.

Grill the Pork Chops
Place the seasoned pork chops directly over the hot coals. Grill for about 4-6 minutes on each side, or until the internal temperature reaches 145°F (63°C).

Add Hickory Flavor
During the last few minutes of grilling, add the soaked hickory wood chips to the fire to create smoke and enhance the flavor.
