    Prepare the Filet

    Preheat your oven to 225°F (107°C). Rub the filet mignon with olive oil, then season generously with kosher salt, black pepper, and garlic powder on all sides.

    Prepare the Hickory Wood Chips

    Soak the hickory wood chips in water for at least 30 minutes. Drain and set aside.

    Slow Roast the Filet

    Place the filet in a roasting pan and insert a meat thermometer into the thickest part of the steak. Place the soaked hickory chips in a smoker box or directly on the coals if using a charcoal grill.

    Cook the Steak

    Transfer the roasting pan to the preheated oven and cook until the internal temperature reaches 125°F (52°C) for medium-rare, about 45-60 minutes.

    Sear the Filet

    Heat a skillet over high heat. Add butter and let it melt. Once the filet is done roasting, sear it in the skillet for 1-2 minutes on each side until a nice crust forms.

    Rest and Serve

    Remove the filet from the skillet and let it rest for 5-10 minutes before slicing. Garnish with fresh rosemary and serve.
