    Prepare the Fries

    Wash and peel the russet potatoes. Cut them into your desired fry shape. Soak in cold water for at least 30 minutes to remove excess starch.

    Cook the Bacon

    In a skillet, cook the bacon strips over medium heat until crispy. Remove from the skillet, drain on paper towels, and chop into small pieces.

    Fry the Potatoes

    Heat oil in a deep fryer or a large heavy pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

    Assemble the Cheese Fries

    Preheat your oven to 350°F (175°C). Place the fried potatoes on a baking sheet. Sprinkle the Monterey Jack and cheddar cheeses evenly over the fries, followed by the chopped bacon.

    Melt the Cheese

    Bake in the preheated oven for about 5-10 minutes, or until the cheese is melted and bubbly. Remove from the oven and garnish with chopped chives.

    Serve hot with spicy ranch dressing on the side.
