Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

Grill the Patty
Season the black Angus chuck patty with salt and pepper. Grill on medium-high heat for about 4-5 minutes on each side or until desired doneness. Add the Monterey Jack cheese on top of the patty during the last minute of cooking to melt.

Prepare the Bun
While the patty is cooking, slice the brioche bun in half and toast it lightly on the grill or in a toaster.

Assemble the Burger
On the bottom half of the toasted brioche bun, layer the spinach, grilled patty with melted cheese, bacon, tomato slice, and red onion rings. Add a dollop of sour cream and drizzle 1000 Island dressing on top. Place the top half of the bun on the burger.

Serve the California burger immediately with your choice of sides.
