A boneless marinated hickory-grilled BBQ chicken breast topped with bacon, Monterey Jack cheese, pickles, sliced tomatoes, lettuce and mayonnaise. Served on your choice of a fresh brioche bun or toasted wheatberry bread.

For the Chicken Preparation

Marinate the Chicken
In a bowl, mix the BBQ sauce with the boneless chicken breasts. Cover and marinate in the refrigerator for at least 1 hour.

Prepare the Grill
Soak hickory wood chips in water for 30 minutes. Preheat the grill to medium heat and add the soaked wood chips to create smoke.

Grill the Chicken
Remove chicken from marinade and grill for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).

Cook the Bacon
In a skillet, cook the bacon slices over medium heat until crispy. Remove and drain on paper towels.

Assemble the Sandwich
On each bun or slice of toasted bread, layer the grilled chicken, bacon, Monterey Jack cheese, pickles, sliced tomatoes, lettuce, and mayonnaise.
