    Prepare the Patties

    In a large bowl, season the ground black Angus chuck beef with salt and black pepper. Form the meat into 4 equal patties, making a slight indentation in the center of each patty to prevent puffing while cooking.

    Grill the Bacon

    Preheat your grill to medium heat. Cook the smoked bacon until crispy, about 4-5 minutes per side. Remove from grill and set aside.

    Grill the Onions

    Slice the sweet onion into thick rings. Place the onion slices on the grill and cook for about 5-7 minutes, turning occasionally until they are charred and tender.

    Grill the Patties

    Increase the grill heat to high. Place the beef patties on the grill and cook for about 4-5 minutes on each side, or until they reach your desired doneness. During the last minute of cooking, place a slice of smoked cheddar cheese on each patty and close the grill lid to melt the cheese.

    Assemble the Burgers

    Toast the brioche buns on the grill for 1-2 minutes until golden. Spread BBQ sauce on the bottom half of each bun. Place the beef patty with melted cheese on top, followed by a slice of crispy bacon and grilled onions. Top with the other half of the bun.
