Shrimp Sandwich

    Make the Tartar Sauce

    In a small bowl, mix together the mayonnaise, pickle relish, and lemon juice. Set aside.

    Prepare the Shrimp

    In a shallow bowl, whisk together the egg and milk. In another bowl, combine the flour, cornmeal, salt, black pepper, and cayenne pepper.

    Coat the Shrimp

    Dip each shrimp into the egg mixture, then dredge in the flour mixture, coating well.

    Fry the Shrimp

    Heat the vegetable oil in a large skillet over medium-high heat. Once hot, fry the shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Assemble the Sandwich

    Spread a generous amount of tartar sauce on the bottom half of each toasted bun. Layer with lettuce, fried shrimp, and sliced tomatoes. Top with the other half of the bun.
