Preparing Black Beans
1. Soak the Beans
Rinse and soak the dried black beans in water overnight.

In a pot, combine soaked beans and 4 cups of fresh water. Bring to a boil, reduce heat, and simmer until beans are tender, about 1-2 hours. Drain excess water.
Preparing Yellow Rice

In a pot, combine rice, water, turmeric, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes or until rice is tender.

6. Combine Salad Ingredients
In a large bowl, combine mixed salad greens, diced tomato, sliced cucumber, and thinly sliced red onion.
7. Dress the Salad
Drizzle olive oil and vinegar over the salad. Season with salt and pepper to taste. Toss gently to combine.
