Preparation

Preparing Black Beans

1. Soak the Beans

Rinse and soak the dried black beans in water overnight.

2. Cook the Beans

In a pot, combine soaked beans and 4 cups of fresh water. Bring to a boil, reduce heat, and simmer until beans are tender, about 1-2 hours. Drain excess water.

3. Sauté Aromatics

In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.

4. Combine and Season

Add the cooked beans, cumin, bay leaf, salt, and pepper to the skillet. Stir well and let simmer for 10-15 minutes.

Preparing Yellow Rice

5. Cook the Rice

In a pot, combine rice, water, turmeric, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes or until rice is tender.

Preparing Rae's House Salad

6. Combine Salad Ingredients

In a large bowl, combine mixed salad greens, diced tomato, sliced cucumber, and thinly sliced red onion.

7. Dress the Salad

Drizzle olive oil and vinegar over the salad. Season with salt and pepper to taste. Toss gently to combine.

Assembly

8. Serve

On a plate, serve a generous portion of black beans alongside yellow rice and a side of Rae's house salad.
