Preparation of Mango Chutney

Make the Chutney

In a bowl, combine the diced mango, red onion, cilantro, lime juice, brown sugar, ginger, and jalapeño. Mix well and set aside.

Cook the Fillet

Heat olive oil in a skillet over medium-high heat. Season the Mahi Mahi fillet with salt and black pepper. Place the fillet in the skillet and cook for about 4-5 minutes on each side or until cooked through.

Heat Beans and Rice

In a small saucepan, combine black beans, cooked rice, cumin, and salt. Heat over medium heat until warmed through.

Making House Salad

Prepare the Salad

In a bowl, combine mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar, and season with salt and pepper to taste. Toss to combine.

Serving

Plate the Dish

On a plate, serve the cooked Mahi Mahi fillet topped with mango chutney, alongside the black beans and rice, and the house salad.
