    Prepare the Blue Cheese Butter

    In a small bowl, combine softened butter, blue cheese, garlic powder, and chopped parsley. Mix well until all ingredients are fully incorporated. Set aside.

    Prepare the Potatoes

    Wash and cut the new potatoes in half. In a pot, add the potatoes and cover with water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Cook the Ribeye

    Pat the ribeye steak dry with paper towels. Rub both sides with olive oil, salt, and black pepper. Preheat a skillet over medium-high heat. Once hot, add the ribeye and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Serve

    Once the steak is done, let it rest for a few minutes. Serve the ribeye topped with the blue cheese butter, alongside the boiled new potatoes.
