Instructions

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, beat together the vegetable oil, eggs, and vanilla extract until well blended. Stir in the grated carrots.

  4. 4

    Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.

  5. 5

    Bake the Cake

Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  6. 6

    Cool and Serve

Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely. Frost with your favorite cream cheese frosting if desired.
