Preparation

    Marinate the Pork

    In a bowl, combine jerk seasoning, olive oil, and lime juice. Add the pork loin and coat evenly. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Rice

    In a pot, bring 2 cups of water to a boil. Add the white rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.

    Prepare the Black Beans

    Heat the black beans in a saucepan over medium heat until warmed through. Season with salt and pepper to taste.

    Grill the Pork

    Preheat the grill to medium-high heat. Remove the pork from the marinade and grill for about 4-5 minutes per side or until it reaches an internal temperature of 145°F (63°C).

    Prepare the Salad

    In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber. Drizzle with olive oil and vinegar, and season with salt and pepper to taste. Toss to combine.

    Serve

    Slice the grilled pork and serve alongside the black beans, rice, and house salad.
