    Prepare the Potatoes

    Wash the new potatoes and cut them in half. Boil them in salted water until tender, about 15-20 minutes. Drain and set aside.

    Season the Filet Mignon

    Preheat the grill to high heat. Pat the filet mignon dry with paper towels. Rub both sides with olive oil, then season generously with salt, black pepper, and garlic powder.

    Grill the Filet Mignon

    Place the seasoned filet mignon on the grill. Grill for 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Add the fresh rosemary sprigs on the grill for extra flavor.

    Prepare the Potatoes

    In a skillet over medium heat, melt the butter. Add the boiled new potatoes and sauté for 5 minutes until golden brown. Season with salt and pepper to taste.

    Serve

    Plate the grilled filet mignon with sautéed new potatoes. Garnish with fresh parsley and serve immediately.
