Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until combined, then press the mixture firmly into the bottom of a 9-inch springform pan.

Bake the Crust
Bake the crust in the preheated oven for about 10 minutes. Remove and let it cool while preparing the filling.

Make the Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, then mix in the Kahlua, eggs, and vanilla extract until well combined. Sift in the cocoa powder and mix until just blended.

Add Raspberry Puree
Gently fold in the raspberry puree, being careful not to overmix.

Assemble the Cheesecake
Pour the filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Bake the Cheesecake
Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.

Remove from the oven, let it cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.

Once chilled, remove the cheesecake from the springform pan. Slice and serve as desired. Enjoy!
