Cooking Instructions

  1. 1

    Prepare the Potatoes

Wash the new potatoes thoroughly and cut them in half. Place them in a pot, add water, and a pinch of salt. Boil until tender, about 15-20 minutes.

  2. 2

    Season the Mahi Mahi

Pat the mahi mahi fillet dry with paper towels. Generously coat both sides with Cajun seasoning, ensuring an even layer.

  3. 3

    Heat the Skillet

In a cast iron skillet, heat the olive oil over medium-high heat until shimmering.

  4. 4

    Sear the Mahi Mahi

Once the oil is hot, carefully place the seasoned mahi mahi fillet in the skillet. Cook for about 3-4 minutes on each side or until the fish is blackened and cooked through.

  5. 5

    Serve

Remove the mahi mahi from the skillet and let it rest for a couple of minutes. Serve the fillet alongside the boiled new potatoes, seasoned with salt and pepper to taste.
