Prepare the Rice
In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add 1 cup of yellow rice and a pinch of salt. Stir, cover, and reduce the heat to low. Cook for about 20 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered.

Cook the Beans
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and green bell pepper. Sauté for about 5 minutes until softened.

Combine Beans
Add the canned black beans (drained and rinsed), 1 cup of vegetable broth, salt, black pepper, and red pepper flakes to the skillet. Bring to a simmer and let cook for about 10-15 minutes to allow the flavors to meld.
