    Marinate the Chicken

    In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, cayenne pepper, and lemon juice to create a marinade. Add the fresh herbs and mix well. Coat the whole chicken in the marinade, making sure to cover it thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). If you’re using wood chips, soak them in water for about 30 minutes before adding them to the smoker.

    Smoke the Chicken

    Place the marinated chicken in the smoker, breast side up. Smoke for about 3 hours, or until the internal temperature of the chicken reaches 165°F (74°C).

    Char the Chicken

    Once smoked, transfer the chicken to a hot grill or grill pan. Sear each side for about 5-7 minutes to create a nice char and crispy skin.

    Rest and Serve

    Remove the chicken from the grill and let it rest for about 10 minutes before carving. Serve with your favorite sides.
