For the Smoked Vegetable Chimichurri

Method

Preparing the Beef Skewers

1

Marinate the Beef

In a bowl, combine the olive oil, garlic powder, paprika, salt, and black pepper. Cut the Certified Angus Beef sirloin into 1-inch cubes and add to the marinade. Mix well and let it marinate for at least 30 minutes.

2

Assemble the Skewers

After marinating, thread the beef cubes onto the wooden skewers, leaving a little space between each cube.

3

Grill the Skewers

Preheat the grill to medium-high heat. Grill the skewers for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness.

Making the Smoked Vegetable Chimichurri

4

Blend the Ingredients

In a food processor, combine the fresh parsley, fresh cilantro, smoked red bell pepper, garlic cloves, red wine vinegar, olive oil, salt, and black pepper. Blend until smooth.

5

Adjust Seasoning

Taste the chimichurri and adjust the seasoning with more salt and pepper if needed. If you prefer a thinner consistency, add a little more olive oil.
