For the Lightly Smoked Steelhead

Prepare the Steelhead

Rub the steelhead trout fillet with olive oil, salt, and black pepper. Let it sit for 15 minutes.

Smoke the Steelhead

Soak the wood chips in water for 30 minutes. Preheat the smoker and add the wood chips. Place the fillet in the smoker and smoke for about 30-40 minutes or until it reaches an internal temperature of 145°F.

For the Tuxedo Sauce

Make the Tuxedo Sauce

In a mixing bowl, combine mayonnaise, sour cream, Dijon mustard, fresh dill, and lemon juice. Mix well and season with salt and pepper to taste. Refrigerate until serving.

For the Mega Potato Pinwheel

Prepare the Filling

In a bowl, mix the softened cream cheese, cooked mashed potatoes, chopped chives, shredded cheddar cheese, salt, and pepper until well combined.

Assemble the Pinwheels

Spread the potato mixture evenly over each tortilla. Roll each tortilla tightly and slice into pinwheels. Secure with toothpicks if needed.
