Cooking Instructions

  1. 1

    Prepare the Filling

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced Portuguese sausage and cook until browned, about 3-4 minutes.

  2. 2

    Add Vegetables

Add the diced onion and bell peppers to the skillet. Sauté until the vegetables are tender, about 5 minutes. Add the shrimp and cook until they turn pink, about 2-3 minutes. Season with salt and black pepper to taste. Remove from heat and set aside.

  3. 3

    Make the Omelette Base

In a bowl, whisk together the eggs, milk, salt, and a pinch of black pepper until well combined.

  4. 4

    Cook the Omelette

In the same skillet, add the remaining tablespoon of olive oil and heat over medium-low heat. Pour in the egg mixture and cook gently. As the edges begin to set, gently lift them with a spatula to allow the uncooked eggs to flow underneath.

  5. 5

    Add Filling

Once the omelette is nearly set but still slightly runny on top, spoon the shrimp and sausage filling evenly over half of the omelette. Carefully fold the other half over the filling.

  6. 6

    Finish Cooking

Cook for another minute or until the omelette is fully set. Slide it onto a plate and sprinkle with fresh parsley before serving.
