1. Prepare the Meat
Trim excess fat from the picanha and cut it into thick slices about 2 inches thick. Season generously with salt and black pepper on both sides.
2. Prepare the Sausage
Slice the Portuguese sausage into thick rounds.
3. Heat the Griddle
Heat a large griddle or cast iron skillet over medium-high heat. Add olive oil to the pan.
4. Cook the Picanha
Once the oil is hot, add the seasoned picanha slices to the griddle. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.
5. Cook the Sausage
In the same griddle, add the sliced Portuguese sausage and cook until browned and slightly crispy, about 3-4 minutes on each side.
6. Add Garlic
In the last 2 minutes of cooking, add minced garlic to the pan, stirring to combine with the meat and sausage.
7. Finish and Serve
Remove the picanha and sausage from the griddle. Let the meat rest for a few minutes, then slice and serve garnished with fresh parsley and lemon wedges.
