Cooking Instructions

  1. 1

    Prepare the Rice

Rinse the white rice under cold water until the water runs clear. In a pot, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

  2. 2

    Prepare the Clams

In a large pot or skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

  3. 3

    Cook the Clams

Add the fresh clams to the pot along with the white wine, lemon juice, salt, and black pepper. Cover and cook for about 5-7 minutes, or until the clams open up. Discard any clams that do not open.

  4. 4

    Combine with Rice

Once the clams are cooked, stir in the chopped cilantro and the cooked rice. Mix gently to combine, allowing the flavors to meld together. Adjust seasoning with more salt and pepper if needed.

  5. 5

    Serve

Serve the clams over the seasoned rice, garnished with additional cilantro if desired.
