Method
Prepare the Wontons
Fry the Wontons
Heat oil in a deep pan over medium heat. Once hot, carefully add the wonton wrappers in batches and fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Make the Shrimp and Sauce
Cook the Shrimp
In a saucepan, heat a little oil over medium heat. Add the sliced leeks, chopped scallions, and diced red bell pepper. Sauté until the vegetables are soft, about 4-5 minutes.
Add Coconut Curry Sauce
Stir in the red curry paste and cook for another minute. Pour in the coconut milk and bring to a simmer. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
Finish the Sauce
Add the fish sauce, lime juice, salt, and pepper. Adjust seasoning to taste and remove from heat.
Assemble the Nachos
Serve
On a plate, layer the fried wontons and top with the shrimp in coconut curry sauce. Garnish with extra scallions if desired. Enjoy your Thai Shrimp Nachos!
