Prepare the Filling

In a large bowl, combine the shredded chicken, black beans, corn, green onions, cheddar cheese, cream cheese, cumin, chili powder, salt, and pepper. Mix well until all ingredients are fully incorporated.

Assemble the Eggrolls

Lay an eggroll wrapper on a clean surface with a corner pointing towards you. Place about 2-3 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the side corners, and roll tightly to seal. Repeat with remaining wrappers and filling.

Heat oil in a deep fryer or large saucepan over medium heat. Carefully add the eggrolls in batches and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
