Method

Seafood Preparation

1

Wrap Shrimp and Scallops

Wrap each shrimp and scallop with a slice of bacon. Secure with a toothpick if necessary.

2

Cook Seafood

Preheat the oven to 400°F (200°C). Place the wrapped seafood on a baking sheet and bake for 15-20 minutes until the bacon is crispy and the seafood is cooked through.

Slaw Preparation

3

Mix Slaw Ingredients

In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well and let it sit for at least 15 minutes to let the flavors meld.

Spicy Mayo Preparation

4

Combine Ingredients

In a small bowl, mix together the mayonnaise, Sriracha sauce, and lemon juice until smooth and well combined.

Assembly

5

Prepare the Baguette

Slice the baguette lengthwise to create a sandwich.

6

Assemble the Po' Boy

Spread a generous amount of spicy mayo on both sides of the baguette. Fill with house slaw and top with the bacon-wrapped shrimp and scallops.

7

Serve

Cut the sandwich into portions and serve immediately.
