Chowder Preparation

1. Prepare the Clams

In a large pot, add the fresh clams and cover them with water. Bring to a boil and steam for about 5-7 minutes or until the clams open. Discard any unopened clams. Remove the clams from their shells and chop them coarsely. Reserve the clam juice.

2. Cook the Bacon

In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

3. Sauté Vegetables

Add butter to the bacon fat in the pot. Once melted, add the chopped onion and celery. Sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.

Add the diced potatoes to the pot, followed by the reserved clam juice. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.

5. Combine Ingredients

Stir in the chopped clams, heavy cream, thyme, and season with salt and black pepper. Heat through for another 5 minutes.
