Prepare the Base

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add Vegetables

Add the diced bell pepper, carrots, and zucchini to the pot. Sauté for about 5 minutes until the vegetables start to soften.

Make the Broth

Stir in the diced tomatoes, vegetable broth, cumin, paprika, salt, and black pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 10 minutes.

Add Seafood

Add the shrimp, salmon, and cod to the broth. Cook for another 5-7 minutes, or until the seafood is cooked through and opaque.

Finish the Soup

Stir in the lime juice and chopped cilantro just before serving. Adjust seasoning with salt and pepper if needed.

Ladle the soup into bowls and garnish with additional cilantro if desired. Enjoy hot!
