Cook the Salmon
Preheat your oven to 375°F (190°C). Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Season the salmon fillets with salt and pepper. Once the oil is hot, add the salmon fillets skin-side down and sear for about 4-5 minutes until the skin is crispy.

Add the Crust
Gently flip the salmon fillets and spread the pignoli mixture evenly over the top of each fillet. Transfer the skillet to the preheated oven and bake for an additional 8-10 minutes, or until the salmon is cooked through and flakes easily.

Prepare the Lemon White Wine Sauce
While the salmon is baking, prepare the sauce. In a small saucepan, combine the white wine and lemon juice. Bring to a simmer over medium heat and let it reduce by half, about 5 minutes.

Serve
Once the salmon is done, remove it from the oven and carefully plate each fillet. Drizzle the lemon white wine sauce over the salmon and serve immediately.
