Prepare the Saffron

In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their color and flavor.

Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the sliced fennel and sauté for about 3-4 minutes until it begins to soften.

Add Mushrooms and Garlic

Add the sliced mushrooms and minced garlic to the skillet. Cook for another 5 minutes, stirring occasionally, until the mushrooms are tender.

Deglaze with Wine

Pour in the white wine, scraping any browned bits from the bottom of the skillet. Allow it to simmer for about 2 minutes.

Add Broth and Saffron

Stir in the chicken broth and the soaked saffron along with its water. Bring the mixture to a gentle simmer.

Cook the Shrimp

Add the jumbo shrimp and frozen peas to the skillet. Season with salt and black pepper. Cook for about 5-7 minutes, or until the shrimp are pink and cooked through.

Garnish and Serve

Remove from heat and stir in the chopped parsley. Serve immediately, garnished with additional parsley if desired.
