Prepare the Mushrooms
Clean the portobello mushrooms and remove the stems. Season with salt and pepper.

Bread the Mushrooms
Dredge each mushroom in flour, dip into the egg mixture, and then coat with the breadcrumb and Parmesan mixture. Set aside.

Cook the Mushrooms
Heat olive oil in a large skillet over medium heat. Fry the breaded mushrooms for 4-5 minutes on each side until golden brown and crispy. Remove and place on paper towels to drain excess oil.

Prepare the Veal Jus
In a small saucepan, heat veal stock over medium heat until warmed. Add chopped fresh basil and diced tomato. Stir to combine and let simmer for 5 minutes.
