    Prepare the Pork

    Season the pork scallopini with salt and black pepper, then lightly coat each piece with flour.

    Sauté the Pork

    In a large skillet, heat olive oil over medium-high heat. Add the floured pork scallopini and cook for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.

    Add Prosciutto and Sage

    In the same skillet, add the prosciutto and fresh sage leaves. Sauté for about 1-2 minutes until the prosciutto is crispy.

    Deglaze with Wine

    Pour in the dry white wine, scraping the bottom of the skillet to release any browned bits. Bring to a simmer.

    Combine Ingredients

    Return the pork to the skillet and top each piece with mozzarella cheese. Cover the skillet and let it simmer for another 5-7 minutes until the cheese is melted and the pork is cooked through.

    Serve

    Plate the pork saltimbocca and spoon the sauce over the top. Garnish with additional fresh sage leaves if desired.
