Method
Preparation
- 1
Cook the Linguini
In a large pot of salted boiling water, cook the linguini according to package instructions until al dente. Drain and set aside.
- 2
Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the sliced shiitake mushrooms and sauté for about 5 minutes until they begin to soften.
- 3
Add Aromatics
Stir in the minced garlic and crushed red pepper flakes, and cook for another minute until fragrant.
- 4
Combine with Tomatoes
Pour in the canned crushed tomatoes and bring the mixture to a simmer. Add the minced anchovy fillets, stirring to combine.
- 5
Add Olives and Season
Mix in the sliced black olives and season with salt and black pepper. Let the sauce simmer for about 10-15 minutes, stirring occasionally.
- 6
Finish with Basil
Once the sauce has thickened, stir in the chopped fresh basil. Adjust the seasoning if needed.
- 7
Combine Pasta and Sauce
Add the cooked linguini to the skillet with the sauce and toss to coat the pasta evenly.
- 8
Serve
Serve hot, garnished with additional fresh basil if desired.
