Prepare the Beef
Season the beef tenderloin with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned (about 4-5 minutes). Remove from the skillet and let rest.

Sauté Vegetables
In the same skillet, add another tablespoon of olive oil. Add the chopped onion and minced garlic, sauté until translucent (about 3 minutes).

Add Potatoes
Stir in the diced potatoes and cook for another 5-7 minutes, until they begin to soften.

Deglaze with Sherry
Pour in the sherry wine, scraping the bottom of the skillet to deglaze. Bring to a simmer and cook for about 5 minutes.

Combine and Finish
Return the seared beef to the skillet, cover, and simmer for another 10-15 minutes, or until the beef is cooked to your preference and the potatoes are tender. Garnish with fresh parsley before serving.
