Season the Pork Chops
Season the pork chops with salt, black pepper, garlic powder, and dried thyme. Allow them to sit for about 15 minutes to absorb the flavors.

Sear the Pork Chops
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side, until golden brown. Remove from the skillet and set aside.

Cook the Sausage and Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the crumbled sausage and cook until browned. Then add the sliced onions, bell peppers, and mushrooms. Sauté until the vegetables are soft, about 5-7 minutes.

Combine Ingredients
Return the pork chops to the skillet with the sausage and vegetables. Add the cooked potatoes and pour in the Madeira wine. Stir gently to combine all ingredients.

Cover the skillet and let everything simmer together for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
