    Prepare the Ingredients

    Peel and cube the potatoes into bite-sized pieces. Slice the onion and bell pepper into strips. Clean and slice the mushrooms. Remove the sausage from its casing and crumble it into small pieces.

    Season the Pork Chops

    Season the pork chops with salt, black pepper, garlic powder, and dried thyme. Allow them to sit for about 15 minutes to absorb the flavors.

Cooking

    Cook the Potatoes

    In a large pot, add the cubed potatoes and cover with water. Bring to a boil and cook for about 10-12 minutes until fork-tender. Drain and set aside.

    Sear the Pork Chops

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side, until golden brown. Remove from the skillet and set aside.

    Cook the Sausage and Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the crumbled sausage and cook until browned. Then add the sliced onions, bell peppers, and mushrooms. Sauté until the vegetables are soft, about 5-7 minutes.

    Return the pork chops to the skillet with the sausage and vegetables. Add the cooked potatoes and pour in the Madeira wine. Stir gently to combine all ingredients.

    Cover the skillet and let everything simmer together for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
