Preparing the Mussels

    Clean the Mussels

    Rinse the mussels under cold water to remove any dirt or debris. Scrub the shells with a brush if necessary. Discard any mussels that are open and do not close when tapped.

    Cook the Mussels

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Increase the heat to high and add the cleaned mussels along with 1 cup of white wine, salt, and black pepper. Cover the pot and cook for about 5-7 minutes, shaking the pot occasionally, until the mussels have opened. Remove from heat and sprinkle with chopped parsley before serving.

Preparing the Marinara Sauce

    Sauté Garlic

    In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add 2 minced garlic cloves and sauté for 1-2 minutes until golden and fragrant.

    Make the Marinara Sauce

    Add 28 ounces of canned crushed tomatoes to the saucepan. Stir in 1 teaspoon of dried oregano, 1 tablespoon of chopped fresh basil, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of red pepper flakes. Let the sauce simmer for 15-20 minutes, stirring occasionally.
