Dip each mozzarella stick into the flour, coating it evenly. Next, dip it into the beaten eggs, letting the excess drip off. Finally, roll it in the breadcrumb mixture, pressing gently to adhere the crumbs. Repeat with all mozzarella sticks.

Place the breaded mozzarella sticks on a baking sheet and freeze for at least 30 minutes to help them hold their shape while frying.

Peel the russet potatoes and cut them into evenly sized strips, about 1/4 inch thick. Rinse them in cold water to remove excess starch, then pat dry with a clean towel.
