Turkey Preparation

    Prepare the Turkey

    Preheat the oven to 325°F (163°C). Rinse the turkey under cold water, pat dry with paper towels. Rub the entire turkey with olive oil, ensuring to cover all surfaces.

    Season the Turkey

    In a small bowl, mix salt, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary. Rub this seasoning mixture generously over the turkey, including inside the cavity.

    Roast the Turkey

    Place the turkey in a roasting pan, breast side up. Pour chicken broth into the bottom of the pan. Roast the turkey in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C).

    Rest the Turkey

    Remove the turkey from the oven and let it rest for 20-30 minutes before carving. This allows the juices to redistribute.

Gravy Preparation

    Make the Gravy

    After the turkey has rested, pour the drippings from the roasting pan into a saucepan. Add flour to the drippings and whisk over medium heat until smooth. Slowly add chicken broth, whisking continuously until the gravy thickens. Season with salt and black pepper to taste.

    Assemble the Sandwiches

    Cut the French rolls in half. If serving hot, layer sliced turkey on the bottom half and drizzle with gravy. For a cold sandwich, layer lettuce, turkey, tomato slices, and spread mayonnaise on the top half before closing the sandwich.
