Roast Beef Preparation

    Preheat Oven

    Preheat your oven to 300°F (150°C).

    Season the Roast

    In a small bowl, mix together olive oil, garlic powder, onion powder, salt, black pepper, rosemary, and thyme. Rub this mixture all over the beef chuck roast.

    Sear the Roast

    In a large skillet over medium-high heat, sear the roast on all sides until browned, about 4-5 minutes per side.

    Roast the Beef

    Place the seared roast in a roasting pan and pour 2 cups of beef broth around it. Cover with foil and roast in the preheated oven for about 3 hours, or until the internal temperature reaches 145°F (63°C).

    Rest the Roast

    Once cooked, remove the roast from the oven and let it rest for 15-20 minutes before slicing.

Gravy Preparation

    Make the Gravy

    In a small saucepan, combine 1 cup of beef broth and bring to a simmer. In a separate bowl, mix cornstarch with water to form a slurry. Gradually add the slurry to the simmering broth, stirring constantly until thickened. Season with salt and pepper to taste.

    Prepare the Rolls

    Slice the French rolls in half and toast them lightly if desired.

    Assemble the Sandwiches

    For hot sandwiches, layer sliced roast beef on the bottom half of the roll, drizzle with gravy, and top with the other half. For cold sandwiches, add lettuce, tomato slices, and mayonnaise to the bottom half, followed by sliced roast beef, and top with the other half.
