Method

Preparing the Potatoes

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Clean and Prepare Potatoes

Scrub the russet potatoes under running water to remove any dirt. Pat them dry with a paper towel.

  3. 3

    Bake Potatoes

Prick each potato several times with a fork and place them on a baking sheet. Bake in the preheated oven for 45-60 minutes, or until tender.

  4. 4

    Cool and Cut

Once baked, remove the potatoes from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise and scoop out a portion of the flesh, leaving about 1/4 inch of potato on the skin.

  5. 5

    Season the Skins

Brush the potato skins with olive oil and sprinkle with salt and black pepper. Place them back on the baking sheet, cut side up.

Preparing the Filling

  1. 6

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and let them drain on paper towels. Once cool, crumble the bacon into small pieces.

  2. 7

    Prepare Toppings

Grate the cheddar cheese and chop the green onions. Set aside.

Baking the Potato Skins

  1. 8

    Add Filling

Sprinkle the crumbled bacon evenly over the potato skins, followed by the grated cheddar cheese and chopped green onions.

  2. 9

    Final Bake

Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

  3. 10

    Serve

Remove the potato skins from the oven and let them cool for a couple of minutes. Serve warm with sour cream on the side.
