Method

Prepare the Chili

  1. 1

    Sauté the Vegetables

In a large crockpot, sauté the chopped onion, minced garlic, and diced bell pepper over medium heat until they are soft, about 5 minutes.

  2. 2

    Brown the Beef

Add the ground beef to the crockpot and cook until browned, breaking it apart with a spatula. This should take about 7-10 minutes.

  3. 3

    Add the Remaining Ingredients

Stir in the canned diced tomatoes, drained kidney beans, chili powder, cumin, salt, black pepper, and beef broth. Mix well to combine all ingredients.

  4. 4

    Cook the Chili

Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the chili is thickened and the flavors meld.

Serve the Chili

  1. 5

    Prepare the Toppings

While the chili is cooking, chop the green onions and shred the cheddar cheese.

  2. 6

    Serve

Once the chili is done, ladle it into bowls and top with shredded cheddar cheese, chopped green onions, and a handful of tortilla chips for crunch.
